- know specifically the nuances of making espresso, its variants and drinks based on it;
- have an excellent understanding of coffee consistencies, recognize coffee varieties, know everything about the principles of feeding raw materials, roasting technology, distinguish smells and taste characteristics;
- be able to figure out the taste of a drink down to an undertone;
- be able to prepare at least 40 types of coffee, including latte, cappuccino, ristretto, correto, etc.;
- specifically possess manufacturing techniques, including grinding balancing, temperature selection, pressure selection, recipe for each portion, etc.;
- draw the most unimaginable patterns and ornaments on the foam.
In order for a sketch to come out truly beautiful, the master hones his art for hours, or even weeks. Naturally, drawing a heart on the surface of a latte is not a problem for a pro, but decorating an espresso with an elaborate pattern is really difficult even for an experienced barista.

- beat the milk using a special technology, so that the foam comes out homogeneous and has the consistency of cream;
- milk, in order for the foam to come out perfect for decoration, must be brought to a temperature at which foam is released in a strictly defined amount;
- milk is poured into coffee so that when mixed it creates elaborate patterns and intricate ornaments;
- the presence of bubbles in the milk is not allowed;
- espresso, like milk, must meet certain standards, including color standards. An impeccable espresso should have a reddish-brown color.
What do you need for latte art?
To make a design on coffee, you need a coffee machine with a milk frothing function. You can’t just beat it with a whisk. Simple battery-powered beaters are also difficult, at least until you have experience. We will talk about the methods available to you in such conditions, but later. First, let's deal with the traditional method. We take:
- High-quality milk, preferably 3.5%. The higher the fat content, the stronger the foam you will get;
- Coffee - don't take the best one until you learn - you'll ruin quite a lot of the product, and drinking so much espresso in a short time is harmful;
- Pitcher, stainless steel jug for whipping. You can use any other one, but with this you will definitely feel the right temperature and be able to froth the milk to the desired degree. What you need is a jug, a metal bowl will not work;
- Cup, preferably round;
- A toothpick or a special thicker wooden stick;
- Espresso machine;
- Syrup, preferably chocolate (not for all recipes).

Drawings can be made by pouring cream, milk or thick milk foam into coffee. In most cases, they are drawn on the foam formed during the production of cappuccino. The clearest drawings are obtained when using foam from the freshest milk poured into a properly prepared espresso.
Making coffee pictures is not as difficult as it seems. To do this you need to know certain techniques. The main techniques are called pitching and etching. In the first case, images are created by pouring a narrow stream of milk from a small jug with a narrow throat (a measuring cup will do instead). In the 2nd, first a snow-white spot is poured onto the coffee, and pictures are made on top with a toothpick. Most bar workers combine both techniques and have their own unique ways of painting with coffee. Their highest skill is considered to be the ability to make several drawings inside one cup. At the bartender championship, each person paints 5 cups in 15 minutes.

To draw a heart on coffee (in fact, the most common drawing option), make a cappuccino with good foam. Take a toothpick, place it in the center of the cup and make a dot. Near the point, dip a toothpick half a centimeter and pass it through the point. The foam itself will transform into the heart.

Experienced bartenders prepare a special thick syrup with the addition of starch. In Europe there are so-called “latte art printers”. It is better if the sketch has clear graphic forms and without unnecessary small details; it is unlikely that they will be filled in evenly.

A more difficult idea for the more experienced: sketching a sunset
Prepare at least some type of coffee. Drop a little milk into the center. When the drop spreads, add just a little cream to the center. Cover half the cup with paper and sprinkle cocoa on top. Use coffee-colored food coloring. If food paint is difficult to find, pour the melted chocolate into a tube from which you can squeeze a narrow line. This could be used glue packaging. Draw an arc across the uncovered surface. Take a toothpick, place it in the center and draw stripes towards the edge of the cup. So you should get an ornament that resembles the rays of the morning sun.

Flower (rosetta): the surface is mentally divided into 4 sectors and first the two upper “quarters” are filled, then, shaking the pinscher slightly, the lower left and lower right are filled, the last portions of milk are poured out in a zigzag motion. They complete the work, as in the case of the heart, by lifting the pitcher and crossing out the picture with a thin stream.

How to make a coffee heart
- a piece of thick cardboard; - sharp scissors; - pen; — glue “Moment”; - coffee beans; - ribbon or beautiful ribbon 20 cm long.
Let's get started
1. Take a piece of cardboard and draw four hearts on it. Two are huge and two are slightly smaller. It’s better to take thicker cardboard, maybe from some kind of packaging. Such cardboard will give the heart additional volume and strength.
2. Carefully cut out the hearts. Because cardboard is thick, this step of craft production cannot be entrusted to children. It is best to involve a man in this activity, they have even more strength. And if he (the man) is not nearby, then we do everything ourselves, as usual.
3. Fold the ribbon in half and glue the free ends to one of the huge hearts in the base area. We attach a second huge heart on top, covering the ends of the ribbon. If the ribbon is wide, as in our case, you can twist it into a flagellum.
4. Now we are forming the volume of the future suspension. To do this, glue the remaining two small hearts on both sides of the huge hearts. I tried to make it without the little hearts and came to the conclusion that in this case the craft loses its flavor. So, our workpiece is ready.
5. All that remains is to paste it with coffee beans on both sides. It is better to do this in two layers. Please note that the grains are mainly glued with the smooth surface down and the middle grooves up. In my opinion, the craft looks more beautiful this way.
Do not skimp on the grains; there should be no gaps through which the cardboard is visible. If you have a limited amount of coffee raw materials, then I suggest painting the prepared cardboard hearts black. Choose paint at your discretion. The production time for crafts naturally increases due to painting of the workpieces and its drying. After painting the workpiece with the least amount of grains, the workpiece will look completely presentable.

Let's start creating a heart
1-2. We come up with and draw hearts on paper. We cut out and trace the pattern on calico folded in half, leaving seam allowances of 5 mm. Cut with seam allowances.
3. Sew, leaving a 2 cm hole for the upcoming stuffing of the heart. We tie the ends of the threads at the hole. Trim excess fabric along the contour, retreating 5 mm. We make notches on the “roundness” and sharp angle of the tip of the heart so that the fabric does not pull during the upcoming filling of the mold.
4-5. Using a wooden stick, we help you twist out your heart. We go through the corner and roundness with a stick from the inside. With its help, we fill the heart with padding polyester or holofiber. The end result should be a plump, appetizing heart. When you press it, it should simply “spring back.” Sew up the hole with a blind stitch.
6. Prepare a fragrant solution: add z teaspoons of instant coffee to 100 grams of hot water, a pinch of cinnamon and vanilla. Add 1 tbsp. spoon of PVA. Stir well. Apply onto the sachet with a synthetic flat brush, starting from the seams. This must be done quickly, without allowing stains to form.
7. Place 3-4 sheets of writing paper on a baking sheet. Place the wet hearts on top. Place in an oven preheated to 100°C and bake with the door ajar. When our hearts take on the appearance of delicious gingerbread, we take them out of the oven.
