Why add salt to coffee: gourmet recipes for connoisseurs

Why is salt added to coffee?

Sodium ions in table salt enhance the aroma of coffee and neutralize the excessive bitterness of low-quality or over-roasted beans. It was for this purpose that sugar and dairy products were originally used in Europe.

Salt also softens hard water, which also has a positive effect on the organoleptic properties of the drink - the sourness becomes less pronounced, the drink is balanced in terms of sharpness and softness.

Coffee with salt also restores the body’s salt balance, which is disrupted by excessive sweating in the hot climate of the Middle Eastern countries. It turns out tasty and healthy at the same time.

It only makes sense to add salt when preparing coffee in a Turk (cezve). The smaller the grind, the better. In all other cases, salt is useless due to the grinding of the coffee beans being too coarse or the nature of the brew. Few people like instant coffee with salt.

Why should you add salt to your coffee?

Contrary to popular belief, caffeine does not make coffee bitter. About 15% of the bitterness in coffee comes from caffeine. Most of the bitterness in coffee comes from two classes of compounds—chlorogenic acid lactones and phenylindanes. (Chemical composition of coffee. Part 1)

Both of these compounds are antioxidants found in roasted coffee beans. They are not found in raw coffee. This clearly shows that the more you roast your coffee, the stronger and more bitter it becomes.

Usefulness and toxicity

Whatever recipe is preferred in Europe or Asia, brewing coffee has several general rules, without which you will not know its real taste.

Coffee doesn't like fuss. The longer it is heated, the better its smell is revealed and the more it invigorates later.

When making a drink, you should never stir it.

Do not allow water to boil.

After removing from the heat, it is better to “harden” the container - subject it to contrasting aquatic procedures by placing it under cool running water for 20-30 seconds.

The usefulness and toxicity of coffee, including with salt, are determined by its chemical composition and the number of cups a person drinks per day.

In addition to caffeine, the grains of this plant contain trace elements, essential oils, and vitamins. When roasted, the alkaloid trigonelline, which is part of the grains, releases nicotinic acid, which lowers cholesterol levels and strengthens blood vessels. But this plus, if consumed in excess, can simply turn into a minus: very large doses of caffeine can disrupt the heart rhythm and have a negative effect on the nervous system.

Another disadvantage: it contributes to accelerated dehydration of the body. This least applies to fragrant coffee with salt.

Despite the benefits of the drink, it is categorically not recommended for pregnant and lactating women: caffeine destroys calcium due to its ability to quickly remove fluid from the body, has a bad effect on the weight of the fetus, and may be a prerequisite for increased irritability of the expectant mother.

Coffee with salt.

There was always a person who refuted existing taste preferences and created new culinary masterpieces. For so long, people have been adding salt to coffee to give the treat a special charm. Of the million different methods for making it, this one will seem very extravagant to you.

What would you say if you were given such an extraordinary treat? Some will think about the prank, others will try the drink in surprise. But meanwhile, such a delicacy is a favorite treat in the countries of the Middle East. Where it is always hot, such coffee is often preferred to the classic version with sugar. To be convinced of its sophistication, it is worth trying to make maritime coffee at home.

Types of salt

There is no concept of coffee salt that is specifically designed for coffee machines or turks. Any non-iodized sodium chloride will do. Iodine is not recommended to be consumed with hot water, otherwise it can cause vomiting and burn the esophagus.

Seafood is best suited, as it can be purchased at any store. It is more concentrated and contains all the microelements that are found in the soil at depth.

Volcanic salt is even more useful, because it falls to the surface of the earth from the depths. The faint pink color is an admixture of sulfur, which is beneficial for nails and hair. Sulfur also has a positive effect on metabolic processes in the body.
