Well, maybe I don’t like unsweetened coffee, I always add sugar, but everything else depends on my mood and current needs. And now I also tried citrus raf. And I fell in love with this new drink so much that I wanted to tell about it and share the recipe for citrus raffa on how to prepare it at home.

I tried citrus raf in “Dudnik”, there is such a chain of coffee shops, probably many people know about them. In general, I like the coffee there, but here I decided to try something new, the choice fell on citrus raf, and since then it has been such a pleasure to drink such coffee.

History of creation

Raf coffee - what is it? How did he appear? This drink was first made in a Moscow cafe called Caffee Bean in 1996. New (unusual at that time) cafeterias offered a huge number of different coffee options. And one of the regular visitors to this establishment once said that he didn’t really like the taste of coffee. To try to please the client and not fall flat on his face, the barista of this cafe came up with a recipe that combined coffee, cream and sugar. The result was a very original cocktail, which was presented to the capricious client. This man's name was Raphael, or Raf for short.

After a while, looking at his friend who was happily sipping an unusual drink, Raf’s friends also wanted to try it and began asking for the same coffee as Raf’s. This is how the name appeared - raf coffee.

But I don’t go somewhere very often, and it turned out that drinking citrus coffee exclusively in a coffee shop is not enough for me, so I wanted to know how to prepare it at home. Well, in general, I was just curious to find out what it actually contains - it has such an especially excellent taste, so soft and unusual. I started to figure it out.

Citrus raf is prepared in different ways. In the same aforementioned coffee shop they use orange zest, as I realized, and vanilla syrup. And milk, of course. Quite a strange combination, it’s true, but how delicious it all turns out! And in another establishment I ordered this drink, it contained citrus syrup.

I looked it up on the Internet, and it turns out that you can also add orange juice to citrus raf, either from tetra packs or freshly squeezed. That’s where I started my experiments with the citrus raffa recipe.

But here's what it turned out - orange juice curdles milk in coffee. As this became clear, I became preoccupied with finding orange syrup and thought that with it, everything would probably work out. I took it from a special store where everything for coffee is sold. Yes, and it curdled the milk.

I went back to looking on the Internet and found information that citrus additives curdle in coffee if it is very hot. Well, after that it became completely clear to me how to prepare citrus raf at home.

Citrus raff at home

First we prepare the coffee. I have a drip coffee maker, so I made coffee in it.

Whisk the warm milk, I do this with a small electronic milk whisk.

We put sugar in the coffee, and I also added a little cool milk so that the coffee is not hot, but warm. Then add orange syrup.

Finally, add steamed milk to the coffee.

The proportions are approximately the following: two parts coffee, one part milk. Although you can have more milk – it’s also tasty and depends only on personal preferences.

And one more important detail - you need to add a little orange syrup, about a tablespoon per glass, otherwise the milk in the coffee will curdle again. Well, it’s not so tasty when there is a lot of syrup - then it overwhelms all the other tastes in the drink, coffee and milk, and it’s no longer the same.

Features of making citrus raffa

By the way, when I tried to prepare a citrus raf recipe with orange juice, it seems that I also just added a lot of juice, and the coffee was very hot. So someday you can try making coffee with juice again, and it’s also interesting to experiment with orange zest, sometime if necessary.

Again, if you don’t really want to bother with whipping milk for citrus raffa, then you don’t have to whip it. Then we do everything exactly the same - add sugar to two parts of hot coffee, one part of cool milk and a tablespoon of syrup.

Here is a recipe for citrus raffa at home. I’m sure it can still be improved, and at the moment you can already enjoy this drink at home, which is, in fact, what I was striving for. And again, you may need my experience. Let's love coffee together!

UPD. I nevertheless tried to prepare citrus raff with orange zest and natural juice, and it turned out exactly the same, simply the best option!

So, let's prepare coffee, now I prepared it using a coffee machine, but this does not change the essence. Three little zests, squeeze the juice out of almost a slice of lemon to a volume of 200-250 ml, add them to the coffee together with sugar.

Then pour warm milk into the drink - the temperature should be such that the coffee ultimately comes out pleasantly warm.

I think if you add a little vanilla sugar to all this, it will be even better, and even without it, the citrus raf prepared using this method was enormously fun.

So it turns out, in fact, you don’t need anything special, just coffee, milk and an orange. At the same time, this time I used the most ordinary milk, fat content 2.5%, and not baked milk, as at first. So everything turned out to be so simple!
