There is a popular belief that coffee with milk is healthier than black coffee:
  • it is less strong;
  • has a neutral taste.

Even on Instagram, a photo of a cappuccino with a pattern on the milk foam gets more likes than a masculine, stern espresso. True, biologists, doctors and coffee professionals have several arguments in favor of coffee without milk, and we decided to go through each one. And don't be shy - the comments are open to your thoughts on this matter.

Milk kills antioxidants

With antioxidants, the opposite is true. Unfortunately, the milk protein casein enters into a chemical reaction with polyphenolic compounds and neutralizes their effect on the body. You will get pleasure from lavender raffa, but it is unlikely that you will get the same benefits as from Americano.

But coffee is one of the richest drinks in the world in antioxidants! Tannins, phenolic compounds that have a tanning effect, are responsible for its antioxidant activity. We wrote about this in more detail here.

Coffee with milk during pregnancy

Women expecting a baby are sometimes unable to cope with their addiction to coffee and drink it with milk. Coffee with milk for pregnant women is indeed healthier than black coffee, but under one condition: if you drink coffee and milkshakes no more than 1-2 times a month.

The effect of coffee on the body during pregnancy:

  • coffee changes hormonal levels. As a result, a woman, whose nervous system is already unstable, experiences anxiety and mood swings;
  • coffee impairs the absorption of iron, which leads to anemia and is extremely harmful for the child;
  • coffee constricts blood vessels, which impairs the supply of nutrients to the fetus;
  • Coffee with milk, just like black coffee, contributes to the leaching of calcium from bone tissue and damage to teeth. Milk does not compensate for calcium deficiency. Coffee is especially dangerous for pregnant women over the age of 30;
  • Sometimes coffee provokes nausea and increases toxicosis.

Coffee with milk during breastfeeding (lactation)

The network is full of assurances that you don’t need to give up coffee with milk when breastfeeding. Moreover, the same would-be advisers claim that children under 7 years old should not have coffee under any circumstances. They also do not recommend that nursing mothers eat chocolate, strawberries, cucumbers and oranges, which are a hundred times poorer in allergens than coffee.

The body of a child under 4 months of age does not break down caffeine, but accumulates it. Together with mother's milk, 1–1.5% of caffeine enters the baby's stomach. That is, after every cup of coffee the mother drinks, even with milk, the child receives 0.5–1 mg of caffeine. And this substance stays in the baby’s body for a long time. Is it any wonder that the child does not sleep and is capricious?

Caffeine affects not only the nervous system, but also the composition of the blood: it interferes with the absorption of iron. Let us add that coffee constricts blood vessels, which impairs lactation.

When breastfeeding, drinking coffee is strictly prohibited during the first 4 months of the child's life. If the child is older than 6 months, then the mother can afford 1-2 cups of coffee per month (at least 3 hours before feeding), but you need to be prepared for the baby to be capricious.

Coffee with milk is difficult to digest

The chemical reaction that occurs between casein and tannins has another negative effect. It makes the proteins contained in milk difficult to digest. This product takes longer to be broken down by gastric juice and can make you feel worse.

In addition, milk contains lactose (also known as “milk sugar”), a carbohydrate from the disaccharide group. The percentage of people with lactose intolerance (more precisely, low levels of the lactase enzyme) in different countries is very high: from 1–2% (Scandinavian countries) to 90–100% (SEA). Among the Eastern Slavs, lactose intolerance affects, according to research by medical anthropologist Andrei Kozlov, from 36 to 80% of the population, depending on the region of residence.

What is the name of coffee with chocolate?

This drink is popular not only in South America, but also among the general public of coffee shops and restaurants. What is the name of coffee with chocolate in numerous menus? It owes its name to the American name for coffee - mocha. The drink made from coffee with chocolate came to be called moccocino . The spelling of the name can be different - moccacino, mokachino and so on.

This recipe was quickly adopted by European chain coffee shops, and now it is difficult to find even a small bar or coffee shop that does not include this coffee in its assortment.

Moccacino recipe (coffee with chocolate and milk)

  • Black chocolate – 40 g
  • Cream – 10 ml
  • Ground coffee – 2 teaspoons
  • Water – 100 ml
  • Milk – 200 ml
  • Sugar or syrup - to taste

Brew coffee according to the usual recipe, add sugar if necessary. Leave the drink to cool. Melt the chocolate in a water bath, then add the cream and stir gently until smooth. Pour the chocolate and cream into the prepared cup or tall glass.

Warm the milk. Carefully, using a knife, pour the milk into the bowl with the chocolate. The layers should not mix, so guide the knife so that the milk slowly flows down the side of the cup. Then carefully add coffee and syrup to the drink. It is clear that the coffee and milk layers will mix due to the similar density of the drink. If you are planning to make moccacino in layers, then instead of coffee, take cream, preferably 15-20% fat. Then the density of the layers will be different, and they will mix less actively.

In a moccacino recipe, there is always twice as much milk or cream as coffee, that is, the drink requires 1/3 coffee and 2/3 milk.

Decorate the drink to your taste, for example, with whipped egg white, colored sprinkles, or chocolate chips.

Serve with a straw.

Sometimes, to speed up the process, chocolate syrup is used instead of chocolate. It's faster, but not tastier. Nothing compares to the aroma of real chocolate.

Cold varieties of moccacino, which have become widespread recently, are prepared by whipping melted chocolate, milk, coffee and syrup suitable for the recipe - mint, strawberry, mango, raspberry. For extra freshness, add crushed ice. This is no longer very similar to traditional coffee with chocolate, but such a cocktail is very refreshing and invigorating.

Milk makes the drink more caloric

The calorie content of a cup of espresso (as well as ristretto, lungo and Americano) without sugar is about 2 kcal, which is slightly more than the zero-calorie content of ordinary drinking water. Milk, which contains more fat, dramatically increases the nutritional value of the drink. For comparison: the calorie content of a cup of cappuccino without sugar is 33.45–37.65 kcal, and those with a sweet tooth get coffee containing 52.80–57.00 kcal. The energy value of a latte is even higher: depending on the amount of milk in the sugar-free drink, it ranges from 56.5 to 110.7 kcal. When adding sugar (or, more often, syrup), the calorie content increases to 130.05 kcal. Everyone's favorite fatty sweet raf contains up to 190 kcal (which is slightly less than 1/10 of the daily requirement for the average city dweller who is not engaged in physical labor or sports).

In general, if you want to lose weight, drink coffee without milk and sugar.

Chocolate coffee recipe

The history of chocolate is no less exciting than the adventures of coffee. Cocoa beans were not always used as a children's treat. The Mayan Indians, for example, prepared a rather extravagant drink from them, which only adult men, real warriors, could drink. In Europe, hot chocolate was used for a long time as a hot, tonic drink, before the advent of coffee and the widespread use of tea. But even after this, salons that served chocolate drinks successfully competed with coffee shops and tea houses. Only in the 19th century did chocolate acquire its familiar bar form, became more accessible and turned from exotic into a delicacy that was allowed even for children. The combination of such ancient and original drinks into one recipe can be considered a continuation of their common history.

Each country has its own recipe for coffee with chocolate. In some countries, cooking methods may vary depending on the traditions of the area or even the individual household. For example, in Brazil, where this recipe is very popular, almost every housewife makes it in her own way.

There are two basic ways to prepare the drink, each of which we will discuss in detail.

Coffee with chocolate recipe No. 1

What you will need:

  1. Ground coffee – 2 teaspoons
  2. Cold water – 100 g
  3. Chocolate (at least 70%) – 10 g
  4. Sugar to taste

You need to brew coffee according to the usual recipe. To soften the taste, add sugar to the drink. Let the Turk with the finished coffee steep and start making chocolate.

Heat two squares, which make up a serving for one cup, in a water bath so that the chocolate begins to melt. Remove and stir the hot chocolate until thoroughly melted. Place it in a warm cup. Send the finished coffee there and carefully place the drink.

If desired, you can add heated cream to this coffee at the rate of 20 grams per cup of espresso.

The drink is served hot or cooled in the refrigerator. This coffee can be served with ice cream. It will enhance the delicate creamy taste of the delicacy.

Many coffee recipes are prepared using melted chocolate, including the famous Brazilian version.

Coffee with chocolate recipe No. 2

Ingredients:

  1. Coffee – 3 teaspoons
  2. Cold water – 120 g
  3. Warmed milk – 150 ml
  4. Chocolate – 100 gr
  5. Sugar to taste

How to cook

  • Brew strong coffee in a Turk. Please note that you need to bring the drink to foam at least 2-3 times, and the coffee itself should be strong.
  • Melt the chocolate in a water bath.
  • Heat the milk, but do not boil. Pour into the melted chocolate in a thin stream, while whisking the mixture with a whisk or mixer.
  • Combine coffee and milk with chocolate. If desired, you can add sugar and decorate the drink with whipped cream, chocolate chips, and almond flakes.

This coffee can be served either hot or chilled.

These recipes do not exhaust the list of drinks based on coffee and chocolate.

Various additives will help diversify the taste and aroma. Mint liqueur will perfectly refresh iced coffee with chocolate, and creamy Baileys will add depth to a hot drink according to a Brazilian recipe. It is a common practice to add various syrups. In winter, orange and tangerine become popular, and in summer, the taste of coffee with chocolate can be decorated with strawberry, raspberry, and currant syrup.

Liqueur and syrups are added to coffee with chocolate at the rate of 30 grams per 1 serving. They are added just before serving, directly into each cup.

What kind of chocolate is used for making

Cocoa powder is often used to make moccacino, although some people prefer to add chocolate syrup instead. You can also use dark, milk or white chocolate.

In order to emphasize the exquisite bitterness of espresso, it is recommended to choose chocolate with a cocoa content of 70% or more. This type is the most natural and least caloric; it contains enzymes and minerals that add beneficial properties to the finished drink.

When it is necessary to soften the bitterness or sourness of espresso, use milk chocolate. It gives the dessert a creamy taste.

An exotic option that has found its fans is coffee with white chocolate.
