A few words about what Masala is - it is an Indian mixture of spices; there is no exact composition. Masala coffee is coffee prepared with spices that give the drink a special aroma and taste.

How to make Coffee Masala

Prepare your ingredients. Coffee must be ground immediately before cooking, it will be more aromatic.

Heat the spice seeds (cloves, pepper, cumin) in a dry frying pan.

Grind the heated seeds in a coffee grinder.

Combine ground spices with spice powder, this is the spicy Masala base.

Pour water into the Turk, add 2 teaspoons of ground coffee and 1 teaspoon of the spicy Masala mixture, put on low heat, brew the coffee: bring to a boil three times, until the “cap” begins to rise, raise over the fire to “hat” sits down and repeat twice more.

Add sugar to milk and heat.

First pour the Turkish coffee into the glasses.

Then pour in the heated milk with sugar. The coffee turned out to be extraordinary, aromatic, spicy, piquant and slightly spicy, just what you need on a cold winter morning!

How to improve the taste

In order for the invigorating drink to please you with its exquisite taste, it is advisable to adhere to the following recommendations when preparing it:

  • Use only high-quality bean coffee, the taste of which you like more than others.
  • Grind the grains immediately before cooking. This way you can achieve the most aromatic drink.
  • There are recipes in which Indian technology differs from traditional one. The ground grains are poured into already boiling water and then boiled for some time.
  • Spices should be used carefully. It may be worth reducing the amount specified in the recipe, or completely eliminating some of the spices. Here you should rely only on your wishes, so that, when trying to get an original product, you do not lose the pleasure of the drink because, for example, one unloved spice.
  • Masala coffee is served as hot as possible.

Features of coffee preparation

Masala coffee will certainly be delicious if you follow some tips from lovers of this drink:

  • Each type of coffee differs from the other in its unique taste and aroma. Of particular importance is the place where it was grown. For masala coffee to reveal its taste and aroma, you need to purchase beans grown in India.
  • It is better to store coffee as beans, in glass containers. You need to grind them immediately before cooking, so the taste will be more intense and rich.
  • Traditional cooking differs from Indian technology. Ground grains should only be added to boiling water and cooked according to the recipe.
  • A special highlight of masala coffee is the Indian spices in its composition. For beginners who are trying this drink for the first time, it is better to put a little spice in it, so the taste will be less specific. Once this taste becomes familiar, the amount of spices can be gradually increased.

Masala coffee should only be drunk hot.

Composition and production of consistency

It is believed that masala (emphasis on the 2nd syllable) maintains a balance of all available tastes. There are sets for spicy dishes, drinks, state Indian dishes cooked in the oven.

  • dark pepper,
  • cinnamon (sticks or ground),
  • cardamom seeds,
  • carnation,
  • caraway.

In total, the mixture may include several 10 ingredients. Apart from the dried version, there is also a masala paste. To make it, all ingredients are diluted with liquid (for example, water or coconut milk) to a creamy mixture. Essential additives for this species include cardamom and ginger.

The choice of spices can be anything, there are no incorrect options. To make masala, for example, such a small set will be sufficient:

  • 2 cinnamon sticks,
  • 2 tsp. cardamom,
  • 2 tsp. carnations (buds),
  • 1 tsp. nutmeg (grated).

The standard manufacturing process is that the selected ingredients first need to be fried in a dried frying pan until the appropriate smell appears for almost a few seconds. Then cool and grind to flour using a coffee grinder, blender or using a mortar.

It is recommended to keep in mind that whole spices should be fried and crushed at the end of cooking. This will allow it to open up and retain the scent.

The finished product should be stored in a hermetically sealed container, preferably away from high temperatures and sunlight. The shelf life is limited to 3-4 months, which is how long the initial catchy smell lasts.

For masala coffee, it is permissible to use unground spices, then the drink will need to be strained before serving.

You can purchase a ready-made mixture and use it. Or add other seasonings.

Chai

Masala tea is also called “Chai”. From the Indian language, “Chai” is translated as simply “tea,” while “masala” means “ground spices.” Chai contains a blend of delicious aromas that can tone the nervous system and improve digestion. It is known for its health benefits and is a cultural staple throughout Asia. How to use it varies greatly depending on how and what you like to brew it with.

Traditionally, Chai is made by hand by grinding spices and infusing them in hot water with tea leaves. Tea bags and ground spices can be used to speed up the cooking process. There are also special teapots for this, which allow you to brew whole leaves and spices as conveniently as when using bags. For the best taste, we recommend grinding the spices before preparing the drink if possible.

Taste

Chai is a strong flavored drink that has a tangy, spicy taste. Its intensity varies depending on the ingredients used, but spiciness with a hint of sweetness always predominates. Ginger and pepper add a spicy note that is balanced out by the earthy notes of cardamom and clove. Cinnamon adds a little sweetness, a soft aftertaste and a delicious aroma.

The tea usually contains maple syrup, brown sugar, and sweetened milk. In coffee shops it is often found in latte form. The milk and sugar help enhance the flavor of the spices while adding a creamy texture that makes the drink even richer. It can be prepared with the addition of not only cow's milk, but also nuts, oats, soy and other plant products.

A little cinnamon, nutmeg and a pinch of cayenne pepper will give your coffee a pleasant spiciness, and cocoa will add a subtle chocolate flavor. Warm milk will add the finishing touch and soften the taste.

Ingredients:

brown sugar or powdered sugar - 1 tbsp. l.; cocoa powder (unsweetened) - 1 tbsp. l.; ground cinnamon - ¼ tsp; ground nutmeg - ¼ tsp; cayenne pepper - a pinch; freshly brewed coffee (for example, Starbucks House blend) - 170 grams; whole milk - ⅓ cup; whipped cream (optional)

Cooking method:

Combine sugar, cocoa powder, cinnamon, nutmeg and cayenne pepper in a large mug. Pour coffee brewed in a French press or brewed in a Turk into it. Add milk to the drink and a couple of teaspoons of whipped cream on top if desired.

A simple but delicious recipe for warming coffee for cold autumn days. To prepare this drink, we recommend choosing naturally bright, moderately roasted coffees. This time we brewed coffee from Indonesia - “Sumatra Gayo” (it has interesting notes of tree bark and spicy foliage) and added some healthy spices to it. According to medieval beliefs, star anise calms and refreshes not only the breath, but also the thoughts, and modern nutritionists claim that cardamom stimulates the functioning of nerve cells and helps alleviate depressive conditions, which is important when gray autumn days arrive.

Ingredients:

star anise - 2 flowers; cardamom - 4 pods; orange - 1 slice, or a teaspoon of fresh orange zest. coarse coffee - 20 grams; filtered water.

Cooking method:

Coarsely grind 20 grams of your favorite coffee. Heat filtered water, but during brewing it should not boil - 90-93 degrees. Heat the French press with a small portion of hot water, drain it and add coffee. Fill it with water to half the volume, mix thoroughly for 30 seconds, add star anise and cardamom. Add water so that 3-4 centimeters remain to the edge of the French press, mix again, carefully place the orange circle in the French press flask and cover with a lid. Let the coffee steep for 3-4 minutes, then lower the plunger and pour the drink into cups. This coffee is delicious on its own, but also goes well with buckwheat honey or cane sugar.

Ingredients:

Columbia coffee coarsely ground (medium roast) - 73 grams; sugar - 100 grams; orange juice - 200 ml; orange zest (cut into squares) - 20 grams; cinnamon (whole) - 3 pcs.; cinnamon (ground) - 1 grams; cloves (whole) - 5 pcs.; cold water (drinking) - 50 ml; hot water 93°C (drinking) - 900 ml.

Cooking method:

Spiced orange sauce: pour sugar into a saucepan, add water, cook over low heat, stirring constantly. Add fresh orange juice, cinnamon (whole and ground), cloves and orange zest to the resulting caramel sauce. Next, cook for 5-7 minutes, stirring constantly. Cool and pour into a storage container.

Preparing a 1 liter French press: Coarsely grind 73 grams of coffee and place in the French press. Heat 900 ml of water to 93°C and pour into a French press, mix the coffee thoroughly. Close the piston without pressing it. Wait 3 minutes, stir the coffee again and close with the piston, but lower it to the bottom. Add 2 tablespoons of sauce to a cup and pour over coffee.

A drink that will invigorate and warm you in the fall is traditional Indian coffee “Garam Masala” (the name is based on the Indian spice mixture of the same name).

Ingredients:

coffee beans - 14 grams; fennel - 5 seeds; cloves - 1 bud; black pepper - 1 pea; cardamom, cinnamon and ginger - on the tip of a knife; water - 150 ml; milk - 100 ml.

Cooking method:

Add coffee and spices to the coffee grinder. Grind everything together. Then cook the mixture in your favorite way - in a Turk or French press with 150 ml of water. Pour the brewed coffee into a cup, add warm milk or cream (without it, the coffee may be too tart), and stir.
