Despite the huge number of types of sweet coffee with milk, Raf coffee occupies a special place in the coffee menus of specialized establishments and in the hearts of coffee gourmets. Almost all of this is due to the gentle creamy taste of the drink with a pronounced coffee color. In addition, there are more authentic flavor combinations - Raf coffee with honey, lavender, citruses.
Origin
Rough coffee in appearance and in its serving method is almost entirely reminiscent of a latte or cappuccino, but it is a fundamentally different coffee drink. It is prepared from espresso, involves the addition of milk and, of course, two types of sweet sand - regular and vanilla. Thanks to this, the taste becomes softer and more delicate, it contains the colors of creme brulee.
The origin of the drink is very interesting, since it was invented in Russia, or more precisely, in Moscow. Let us remember that the birthplace of most types of coffee is Italy, and the world owes the Yankees to the emergence of drinks with a huge amount of water (Americano) or the addition of milk.
If we talk about Rafa coffee, then for the first time it was prepared by the barista of the Coffee Bean coffee shop chain in the early 90s for a foreigner named Raphael. The guest was not a huge fan of cappuccino and latte, so he asked to prepare a drink especially for him, in which the taste of espresso would not be so clearly felt.
The staff prepared espresso for the guest and whipped it with light cream and sugar. The guest liked the result of such an experience, and then all of Raphael’s friends, who ordered “coffee like Raphael’s,” appreciated it. As a result, the name was transformed into a more comfortable Raf-coffee, and then (like the drink itself) moved to other specialized establishments.
Currently, Raf coffee is offered by most coffee shops not only in Moscow, but also in other towns of the Russian Federation, while it is practically never found in foreign establishments.

The history of raf begins in the late 90s in Moscow. According to the generally accepted legend, raf appeared in the Coffee Bean coffee shop. The baristas - Gleb Neveikin, Artem Berestov and Galina Samokhina - were so eager to please a client who refused to drink traditional drinks that they came up with a completely unique recipe. This man's name was Rafael, and it is to him that we owe the fact that there is raf in Russia.

Soon, not only Rafael, but also his friends began to order coffee “like Rafa” or, more simply, “Raf coffee.” The drink was gaining popularity and was in demand, first among visitors to Coffee Bina, and then in other coffee shops where Gleb, Galina and Artem worked.
By the way, in the English-speaking environment the phrase “rough coffee” also exists, but it hides a completely different concept - coarsely ground coffee.
A classic recipe and another one with lavender
What was in that recipe? Why did he win so many hearts so quickly and firmly? Yes, in essence - nothing special, everything ingenious is simple. To prepare raf according to the original recipe you need a few ingredients:
- 1 tsp. fine ground coffee
- 50 ml water
- 100 ml cream 10-11%
- 1 tsp. Sahara
- 1 tsp. vanilla sugar
First, the barista prepares a classic espresso in a volume of 35 ml, and then whips it together with cream and sugar in a pitcher. The resulting drink is poured into a cup and, if desired, served with cinnamon.

The key difference between raffa and latte is that cream is used instead of milk and vanilla flavor is added. And raf differs from cappuccino in the method of preparation - the cream is not whipped separately, but together with espresso.
Barista Alexandra Marygina told the secret of how to make the perfect raf coffee even at home:
“It is very important not to overbeat the ingredients so that the foam is about a centimeter and glossy, then the drink has a very delicate enveloping texture.”
Later, based on the classic raf, various alternative options for its preparation appeared. Lavender has become one of the most popular, and this is also a purely Russian invention.
. Half a teaspoon of lavender flowers and sugar are added to the ground coffee during the brewing stage, and the resulting lavender espresso is then whipped with cream. Another variation of the recipe suggests that you first grind the lavender and sugar to a powder state, and then add this mixture along with the cream to the ready-made espresso just before whipping. The resulting drink should taste like ice cream.
Since raf is prepared with cream, and always with sugar, it is quite a high-calorie drink. As a rule, one cup of raff coffee contains about 200 calories. For comparison, a standard cup of cappuccino without sugar can weigh less than 100 kcal, and a hefty cup of latte usually weighs 180 kcal. The only thing higher in calories than raffa is moccacino (over 300 Kcal per cup).
By the way, baristas themselves rarely drink raf (for various reasons), but as a rule they like to prepare this drink.
What do raf and rusiano have in common?
At first glance, nothing. Raf is an original drink, invented in Russia, but has a completely “non-Russian” name. Rusiano is a classic Americano, which was given a more patriotic sound by Prime Minister Dmitry Medvedev.
On the hype, the name Rusiano should have spread everywhere. A trademark was even registered. But here’s the irony: the idea eventually gave rise to many memes, but failed, while raf, without the slightest effort, became truly Russian coffee. At the moment, it is almost 100% Russian, since rough is almost unknown outside of Russia.
“I haven’t met raf in other countries,” admits our barista expert, “only if the Russians discover something. For example, Doubleby had several franchises in Prague, Barcelona and other countries, and they cooked there.”
However, this insignificant fact will not stop us from being proud of Russian baristas. Do you agree?
Composition and calorie content
The composition of traditional Raf is quite common - a serving of espresso (25-30 ml), 100 ml of cream with a fat content of less than 11% and 2 teaspoons of sugar. The latter is represented by ordinary sand and vanilla sugar, taken in equal quantities.
The energy value of a 130 ml serving is 135-150 kcal. But it is more convenient to calculate calorie content each time, taking into account the ingredients of the drink. A serving of espresso is the lowest in calories – only 2 kcal. The main load comes from cream, the calorie content of which is 120 kcal per 100 ml, and sugar. Regular has an energy value of 377 kcal per 100 g (19-22 kcal per teaspoon), vanilla - 288 kcal (about 14-20 kcal per teaspoon).
If supplements are used, this usually results in an increase in calories. Naturally, honey is the most nutritious - 312 calories per 100 g of product or 30-35 kcal per teaspoon. The calorie content of fresh orange juice is about 36 kcal, lavender is 23 kcal per 100 g of product.
If caramel, toppings, and chocolate chips are used for decoration, this also affects the total calorie content of the drink.
Rough coffee, especially in coffee shops where it is served in huge glasses, can hardly be called a diet drink. If you are watching your figure, it is better to immediately include it in your daily calorie intake and not consume it at unplanned times. The drink itself is sweet, rich and high in calories, so it does not need additional desserts.
Difference from cappuccino and latte
Rough coffee, latte and cappuccino are prepared on the basis of espresso with the addition of milk or cream and sugar, but these drinks are very different from each other.
Unlike cappuccino, Raf coffee is prepared with cream, which makes its taste softer, and creamy notes are more clearly felt in it. The manufacturing process also differs - for cappuccino, milk is frothed separately and poured into espresso. Raf anticipates the simultaneous whipping of espresso, cream and sugar, so its structure is more airy.
If we associate latte with Raf coffee, then first it is also necessary to emphasize that the recipe involves the use of milk, not cream. Some of the milk is simply heated, while the other is whipped using a steam vent. Lattes are usually laid out in layers - first, heated milk, then a layer of espresso is carefully poured (along the walls of the glass), followed by a cap of whipped milk. It makes sense that such a drink is served in a glass goblet to show the transition of layers.
For a latte, it is important that the ingredients do not mix, while for Raf coffee the ingredients are mixed in one container. It turns out that the difference is justified by manufacturing technology, which, in turn, leads to differences in the serving of drinks.
Raf coffee today
Today you can find several versions of the Raf drink. The original recipe was:
- Creme brulee or caramel syrup was first poured into the cup, and then 35 ml of espresso made from Arabica beans;
- the barista heated the 15% cream and mixed it with vanilla sugar, then whipped it into foam;
- the finished coffee was often sprinkled with cinnamon for decoration.
At first it was made by whipping espresso, cream and vanilla sugar.
Many people will like the taste of “Raf” because of its delicate aromatic consistency. Along with Latte and Cappuccino, this drink has a creamy vanilla taste. It will be an ideal option for those who like not very strong milk coffee. For 150 ml of Raf coffee there are 135-140 kcal.
Experiments with Raf continue to this day. There are already several varieties of it: with double espresso, with honey, with lavender, with cold cream and whipped.
The coffee base is not always Arabica; you can take Turkish coffee, replace the cream with milk, and replace the vanilla with cane sugar.
Just like Cappuccino and Latte, this drink is most often prepared using espresso from fresh coffee beans. “Raf” differs from “Latte” in that the second type contains only espresso and milk. And the main difference from “Cappuccino” is the foam, which is whipped separately.
A proper Cappuccino should have a contrast: a clear line between the coffee and the thick foam. In Raf coffee, the emphasis is only on the correct milky-vanilla taste, so the espresso is whipped together with milk.
Traditional recipe
The traditional recipe is considered to be the one according to which coffee was prepared in the early 90s at Coffee Bean. You can repeat the drink only if you have special whipping equipment and a coffee machine. The latter will help prepare the “correct” espresso with a 25-30 second extraction time. The whipping apparatus will allow you to achieve uniformity of the drink and obtain a light, airy, foamy texture.
To make one serving of Raf coffee according to a traditional recipe, you will need the following ingredients:
- 50 g espresso (actually, a double shot of regular 25 ml espresso;
- 100 g of cream, the fat content of which is less than 11% (if only a fatty product is available, it must be diluted with milk in advance);
- 1 teaspoon each vanilla and regular sugar.
First you need to brew the espresso. The flow chart shows that 7-8 mg of ground coffee beans per 25 ml of water is required. While the coffee machine is preparing the drink, you need to warm up the dishes for serving Raf coffee. This can be a clay mug or a transparent glass with a low stem.
Cream must be used at room temperature; cool cream will not whip well and will cool the drink. The cream is placed in the pitcher, sugar is added there, after which the prepared espresso is poured into it. Now you need to beat the resulting mixture using the steam vent of the coffee machine. The drink is ready, all that remains is to serve it perfectly.

Classic
The basic recipe for raf coffee does not change, but during preparation the cocktail is supplemented with new flavors and combinations.
Correct proportions: whip 100 grams of low-fat cream with 3 grams of granulated sugar and vanilla, mix with 50 grams of espresso. Shake the ingredients again until smooth and fluffy.
Orange (citrus)
Really fresh orange juice contains 25% of the daily requirement of vitamin C. You can experiment with fruits, use grapefruits, lemons, limes, and pomelo.

Ginger
This is a root vegetable with a distinct pungent taste - an integral part of any winter drink, the purpose of which is to warm you up. You can prepare raf with grated ginger or ginger syrup. To extract the spiciness from the fruit, soak it in cold water in advance or simmer it over low heat in grated or chopped form.
Grind the resulting pulp with sugar. Use the mixture immediately to avoid getting candied fruits. Whip espresso and cream with sugar, add ginger crumbs and mix thoroughly. Serve with gingerbread, truffle or candied fruit.
With syrup

You can brew Raf at home if you don’t have a coffee machine in a cezve. First, you need to prepare coffee from 50 ml of water and 1 teaspoon of ground coffee. Grinding the beans just before making coffee will make the taste of the drink brighter. For the same purpose, you can throw a pinch of salt on the bottom of the cezve or warm up the ground grains on the bottom of the cezve a few seconds before.
It is better to pour coffee with cool, unboiled water; the heat should be moderate. It is important to warm up the coffee beans, obtaining their beneficial substances, taste and smell, but do not allow the drink to boil. As soon as you notice foam rising, it is recommended to remove the cezve from the heat and strain the coffee.
At this time, it is recommended to heat the cream. You can do this in a water bath or place them in the microwave for a few minutes. Next, it is recommended to combine 2 teaspoons of sugar (it is better if it is equal amounts of vanilla and regular sugar), heated cream and brewed coffee and beat the mixture well with a blender. When a lush foam appears on the surface, the coffee is poured into a serving bowl. It is better to warm it up over steam beforehand.
You can decorate the drink with chocolate or coconut shavings or topping.

Lavender raf
Raf with lavender has a calming effect on the nerves.
To prepare it you need:
- 25–50 ml black coffee;
- 100 ml cream;
- 5 g sugar;
- ½ teaspoon dried lavender flowers.
How to cook:
- Lavender flowers should be ground as finely as possible using a mortar or coffee grinder. Some recipes say that they can be mixed with sugar first, but this is actually not worth doing, since the sugar will heat up in the coffee grinder and, melting, will stick to the screw of the coffee grinder, which can break it.
- Prepare black coffee.

Honey raf
It is practically no different from ordinary raffa, except that all the sugar in it is replaced with honey, and cinnamon is often added to the finished drink.

- 50 g chocolate (dark or milk);

- First you need to brew strong black coffee: add ground coffee and a pinch of salt to a pot of water, stir, and then put on the lowest heat. Cook until a head of coffee foam forms. Then you need to remove the coffee from the heat, wait until the head of foam settles, and return to the heat. This must be repeated twice.
- When the coffee is brewed, remove the Turk from the heat, add a teaspoon of cold water, cover with something and wait one minute. Thanks to this, the coffee grounds will settle in the Turk faster.
- The cream needs to be heated, but not brought to a boil. Next, brewed coffee, powdered sugar and cream cheese are added to the cream (curd cheeses and green cottage cheese are not suitable).
- After this, all ingredients must be mixed and beaten into a homogeneous mass.

Orange raf
Orange raf, like many other varieties, is also prepared based on the standard recipe, but a couple of teaspoons of orange juice are added. This is done before whipping the naptic.
To prevent the raf from turning out too cloying, the amount of added sugar can be reduced. Usually they put in about two times less compared to ordinary rough.
Citrus raf
There is also a recipe in which instead of orange juice, orange sugar is used in the recipe and the finished drink is decorated with a slice of some citrus.
Orange sugar is not very common, but it can be easily prepared at home. First, the orange must be scalded with boiling water, after which its zest must be chopped (for example, on a grater). Then the chopped zest is mixed with sugar (about 125 grams) and one teaspoon of water.
This mixture must be ground in a blender at low speed (at high speed the sugar will heat up and melt). The resulting consistency is then laid out to dry, but this is not necessary for coffee; the resulting mixture can be immediately added to the drink.
To make it even tastier, you can use cane sugar instead of regular sugar as the base for orange sugar.

- 100 g of milk (it can be replaced with cream, as in the classic recipe);

Where did the recipe for raf coffee come from, the traditional version of which many coffee lovers like even more than an ordinary cappuccino? It turns out that our homeland, a country that has never been a coffee Mecca, is also able to amaze gourmets in the world of coffee. This happened back in 1996, when next to the Kuznetsky Most metro station in Moscow the Coffee Bean coffee shop was thriving and living its own slow life.
A distinctive feature of this coffee shop was that it was created in the South American style, so many foreigners often visited this establishment to drink a good cup of espresso or cappuccino. The coffee shop actively amazed guests with its variety of types of coffee, many options for traditional and unusual coffee drinks.
Therefore, it is logical that after some time regulars appeared here, for whom “Coffee-Bean” became a place of greatest relaxation and enjoyment of their favorite drink. One of these guests was a certain Raphael. He didn’t really like the cappuccino the barista was preparing, so he asked him to prepare something special and unusual. This special drink was raff coffee, which was prepared by whipping espresso, 11 percent cream and vanilla sugar.
Rafael really liked this drink, and after that he began to come to Coffee Bean much more often. And friends and acquaintances began to order coffee like Raf’s. But this name didn’t sound very good, so after some time the name raf coffee was invented. Then this drink spread not only in Moscow, and not even within the borders of the Russian Federation - it became popular and known throughout the world.

It is important to note that for honey raff coffee sugar is not used, and a teaspoon of honey is added only before beating in a blender. For a citrus drink you will have to use not only vanilla, but also orange sugar. And after making coffee, decorate with a slice of lemon or lime.
