Brew coffee in a French press or Turk. If a press is used, heat the water to 90 degrees, place it in the flask along with the coffee and gently “press” the piston. Cook in a Turk according to the classic method until the foam rises, then remove from heat and repeat the operation 4 times. Then the coffee must be cooled to 10 degrees. It is better to place the container with the drink on an ice block or lower it into ice water, using the “water bath” principle in reverse. Place the ice cream in a cup, pour in the coffee and let the dessert melt a little. A variation of the classic recipe, when coffee and ice cream are whipped in a blender, is called “airy ice.”
