Poles will offer you this drink in literally every coffee shop. The Warsaw drink has its own history, almost three centuries old.

The wonderful invigorating drink began to be consumed in the “Land of Churches” in the 18th century (1724, to be precise), but soon the ladies and gentlemen decided that ordinary coffee was too harsh. A way was found to soften the taste so that the ratio of coffee powder to liquid did not change. The secret turned out to be baked milk.

In our article we will show you recipes based on the “secrets” of professional baristas. Remember that the drink we are talking about has a three-century history, and as a result, there are many options. There are several versions of the recipe, because over three centuries it has changed many times. Each famous barista added something of their own to it and, one might say, a piece of their soul. We will present the most popular recipes for making Warsaw coffee in our article.

Subtleties of preparing the drink

You need to make coffee at home exclusively from natural beans. A soluble product will not work. When using it, the drink will not acquire the necessary taste qualities. In addition, the following recommendations should be followed:

  • You need to grind the grains before starting cooking. It is better not to perform these actions in advance;
  • coffee fractions should be medium in size. Excessively small and large ones should not be used;
  • It is better to add baked milk instead of regular milk . This product has a special aroma;
  • Cups should be warmed before filling. To preserve the delicate foam, the liquid is poured into them in a thin stream, slowly;
  • Boiled milk should not be added to the composition. Otherwise, there will be pieces of foam in the finished drink;
  • decorate the surface with cocoa or melted chocolate. In Poland it is not customary to use cinnamon for this purpose.

Cooking technology

  • First of all, you should choose the right coffee beans, paying attention to the expiration date, proper storage and quality of the product. You need to use exclusively natural coffee, which is significantly superior in aroma brightness to any variety of instant analogue.
  • It is not recommended to grind grains in advance. This process must precede preparation, and they must be ground to a medium grind to avoid large amounts of sediment from getting into the drink after straining.
  • The technical equipment of the process does not require the purchase of any complex equipment. It is enough to have a Turk (or a small mug or saucepan), a measuring cup and equipment for mixing and serving coffee.

Preparation is carried out in several stages.

  1. First, the milk is poured into a Turk and heated over medium heat until foam forms, i.e. almost to a boil.
  2. Then it is removed from the heat, and pre-crushed grains are poured into it in small portions.
  3. After this, the coffee with milk is brought to a boil with constant stirring and removed from the heat again.
  4. When the foam settles, the mixture is stirred and brought to a boil again.

Step-by-step cooking allows you to get a wonderful drink with a bright aroma and delicious taste. Various modifications of recipes entail small additions and changes during the cooking process, but the basic outline remains the same.

Classic coffee recipe

When using the classic recipe, the following ingredients are used:

  • 10 g crushed grains;
  • 100 ml water;
  • 100 ml milk;
  • 3 g vanilla sugar;
  • 10 g granulated sugar.

The following actions are performed:

  1. Coffee powder is poured into the pot and immediately poured cold water.
  2. The cezve is placed on the stove.
  3. As soon as foam appears on the surface, set the container aside.
  4. Add granulated sugar to the composition and put the Turk back on the fire.
  5. When the liquid begins to boil, the cezve is set aside.
  6. In a separate container, milk is mixed with vanilla sugar and the resulting mass is heated on the stove. It is not brought to a boil.
  7. The milk product is initially poured into the cup.
  8. The strained coffee drink is slowly poured on top.

Classic Warsaw coffee recipe

Ingredients:

  • eight grams of coffee,
  • sixty milliliters of baked milk,
  • the same amount of water, five grams of sugar.

Pour coffee into the cocotte maker or Turk, pour water and put on fire. We wait until it boils. Cook over low heat. Remove from heat as soon as it boils. After ten seconds, return the Turk to the fire and boil again. Then we repeat the procedure. There should be three boils in total. Next step: cool and strain the coffee. We heat the baked milk, but not to one hundred degrees. Heat a cup and pour milk into it. In a thin (!) stream, pour our coffee directly into the milk.

You will need:

  • eight grams of coffee,
  • a quarter liter of baked milk,
  • ten to twenty-five grams of sugar,
  • two to three grams of vanilla sugar
  • and, if desired, five to ten grams of chocolate.

The milk must be heated to sixty degrees. Pour coffee, sugar and vanilla sugar into milk. Stir. Place the cocotte maker or Turk on low heat and boil.

The resulting drink must settle. After this, heat it up again to one hundred degrees. Let it stand for two minutes again and boil for the third time. When the coffee has cooled a little, strain it and whisk until foamy. Place a small piece of chocolate in a spoon and keep it over steam. Pour the resulting melted chocolate into the cup. No need to stir before serving. Chocolate serves as a decoration for the drink.

Warsaw coffee with foam

We will need the following ingredients:

  • eight grams of coffee (as in previous recipes),
  • one hundred twenty milliliters of water,
  • twenty five grams of sugar,
  • one hundred milliliters of baked milk
  • eighty-five milliliters of milk for foam.

Pour eighty-five milliliters of milk into the Turk and place it in the oven, preheated to one hundred and sixty degrees. As the foam appears, remove it. After removing three foams, turn off the oven. Now we prepare coffee from coffee and milk.

You can, of course, use a coffee maker or machine, but remember that coffee made in a Turkish coffee machine will always be better. We have already explained why. A drink prepared in a Turk must be strained, otherwise an unpleasant sediment will form.

Heat the baked milk, mix it with coffee, add sugar, and bring to a boil. Pour the drink into a preheated cup. All that remains is to decorate it with foam.

Warsaw coffee with cream

Ingredients:

  • a quarter cup of cream,
  • eighty-five milliliters of baked milk,
  • one hundred milliliters of cool water,
  • two teaspoons of coffee (natural and medium grind, of course),
  • one teaspoon of sugar,
  • half a teaspoon of vanilla sugar.

Brew the drink. Pour the powder into a pot, fill it with cold water, and put it on the fire. Bring almost to a boil. Strain and re-pour into the Turk. We do two more boils. Before the last, third boiling of the drink, add milk, cream, sugar and vanilla sugar.

Warsaw coffee with milk

To make Warsaw-style coffee with milk you will need the following products:

  • 8 g ground beans;
  • 250 ml milk;
  • 20 g granulated sugar;
  • a pinch of vanilla sugar;
  • 10 g chocolate.

Step-by-step instruction:

  1. Pour the dairy product into the pot and heat to 60 degrees.
  2. Add vanilla sugar, ground coffee beans and granulated sugar.
  3. Mix all ingredients.
  4. Place the container on the stove and set it aside when it starts to boil.
  5. Let the liquid sit for a couple of minutes.
  6. Bring the drink to a boil twice more, setting aside for a few minutes.
  7. Give the liquid time to cool slightly and then whisk it until foam appears on the surface and pour the resulting mass into a cup.
  8. Place the chocolate in a spoon and hold it over the steam until it melts.
  9. Pour the melted chocolate into the cup, but do not stir. It acts as a decoration.

Recipe option with baked milk

The following ingredients are used in the preparation process:

  • 8 g ground coffee beans;
  • 60 ml baked milk;
  • 60 ml water.

You just need to follow a few simple steps:

  1. Brew ground grains in a Turk using the classic method.
  2. Strain the resulting drink.
  3. In a separate container, heat the baked milk to 60-70 degrees and immediately pour it into the cup.
  4. Slowly pour a little cooled coffee on top.

Manufacturing Features

A coffee drink that has almost three centuries of history cannot but have manufacturing peculiarities. The barista's advice will help you make Warsaw-style coffee exactly the way it should be.

  • Only natural coffee is suitable for making the drink; replacing it with instant coffee is unacceptable. After all, natural coffee, especially if it is stored as beans and crushed just before production, has a rich aroma, much more catchy than its instant counterpart.
  • The quality of the coffee beans matters. There are no serious requirements for choosing a type of coffee, but it is very important that it is not spoiled, moldy, or stale. It is necessary to store coffee beans correctly, according to the instructions on the package, otherwise there will be no one to complain about.
  • To brew Warsaw-style coffee, it is advisable to use medium-ground coffee, because it is filtered before serving. Finely ground coffee may remain in the drink, spoiling the enjoyment of its consumption.
  • In the original, Warsaw-style coffee requires baked milk. It is often replaced with ordinary coffee, but still, in this case, the finished coffee drink loses some notes characteristic of true Warsaw-style coffee.
  • When making coffee, it is recommended to use hot but not boiling water and milk. If you pour boiling liquid over coffee and bring it back to a boil, the coffee will not have time to fully reveal its characteristics. In addition, when milk boils, foam appears, which should not accidentally get into the drink, even in this case, if you have chosen a coffee recipe with foam.
  • It is recommended to pour Warsaw-style coffee into heated cups in a narrow stream. The thinner it is, the thicker the warm foam that forms on the surface will be.
  • It is not recommended to use cinnamon to decorate Warsaw-style coffee. It is recommended to give preference to cocoa powder, chocolate chips or melted chocolate.

  • 75 ml milk;
  • 100 ml of baked milk product.

You need to perform the following manipulations:

  1. Pour the milk into a heat-resistant container and place it in the preheated oven.
  2. Wait for the foam to appear and remove it. Repeat these steps three times.
  3. Pour coffee powder, sugar and water into the cezve.
  4. Brew espresso and strain it immediately.
  5. Warm the baked milk a little and pour into a cup.
  6. Immediately after this, pour the espresso into it.
  7. Decorate the surface with foam prepared in the oven.

INGREDIENTS

  • Coffee 1 teaspoon
  • Baked milk 1 Cup
  • Vanilla sugar 1 pinch
  • Sweet sand To taste
  • Cocoa 1 pinch

Those who love strong coffee, but do not like its rich, bitter taste, will almost certainly like Warsaw-style coffee.
