How to Roast Green Coffee

  3. The grains are fried for 5-15 minutes, stirring constantly.
  4. Then the fruits are cooled and peeled.

It is recommended to use a separate frying pan for coffee. This is due to the fact that the grains absorb foreign odors.

Do not heat beans in the oven. There they will fry and acquire an unpleasant, bitter taste and burnt aroma.

How to fry

You can roast the grains either in the oven or in a frying pan. It is best to use the second option, but you will need a frying pan with a thick bottom. The grains should be poured into a dry frying pan no more than 1 centimeter from the bottom. You need to fry over low heat, just stir constantly. You should not leave the frying pan, but be patient. And under no circumstances should you turn the heat on to maximum. When you see by smell and color that the beans are ready, immediately pour them into another container, do not leave the coffee in the pan so that the beans do not burn.

Brewing in a French press is done by performing the following steps:

  3. 2-3 teaspoons of ground coffee are poured into the French press.
  4. Then boiling water is poured in.
  5. The dish is closed with a lid, but within 5 minutes the filter is not compressed.
  6. Slowly the rod begins to move, thus moving the filter to the lower part of the structure.
  7. The liquid that has been separated from the grounds is poured into cups.

The main problem with brewing green coffee

Everyone who has tried to prepare a light-rich drink at home has encountered one problem. It is not possible to grind the rather “plastic” green coffee beans in a regular coffee grinder.

You can’t fry or dry them either - chlorogenic acid will be lost, and with it the whole point of the idea will come to naught. You can dry the grains in a dehydrator at a temperature of no more than 40 degrees Celsius, no more than 1 hour. But for traditional “Arabica” coffee grinders, this also doesn’t do much.

You will have to grind green coffee... in a good old meat grinder. Use the most powerful knife that “cuts” the meat into the smallest mince. Some models will require you to pass the mixture through a meat grinder 2 times. It is better to store the “intermediate preparation” product in the refrigerator, and even better – grind it right before cooking in the required quantity. The point is that with prolonged contact with air, the antioxidant properties of the product decrease. For storage, you can use vacuum bags or similar containers, this reduces the loss of antioxidants.

Some models of high-power blenders with a bowl can also grind green coffee. By the way, you can add half a lemon to 2 tablespoons of green coffee to get an even richer, vitamin C-tasting drink.

How to drink correctly

It is correct to drink this coffee drink without adding sugar. It is recommended to use it a quarter of an hour before a meal or 30 minutes after a meal. You should drink no more than two servings per day.

Demand creates supply, people are actually willing to buy raw coffee berry seeds, hoping that it will make them healthier.

Is this some special variety? Not at all.

Green coffee is actually the same product that we use to make our favorite espresso and Americano, only it has not gone through the final stage of processing - that is, roasting.

But the same one, but not the same one. Green coffee, having an almost similar set of useful microelements and substances, is very different from roasted coffee in its ability to release them. In fact, it is a completely raw product that requires further processing if we want to get more benefits from it than from boiled stones.

In Russia, you can most often buy regular unroasted beans. At the same time, the price of such a product surprisingly turns out to be equivalent to the cost of expensively roasted grain and averages from 700 to 1500 rubles. per kg (you must agree, this is quite strange, considering that it takes much more effort to prepare ready-made grain).

All three types of dangers await us because green coffee is not subjected to heat treatment, which completely destroys all harmful substances that can linger in the beans.

Myth #3: Green coffee beans can be made at home.

It is possible, but, as we wrote above, it will taste like boiled stone. Or hay, if the grain is crushed. Let's be clear: whole raw beans do not lend themselves to a regular coffee grinder - if you try to grind them, you will break it with a 95% chance. Unground beans can give water about the same beneficial properties as dried peas, which were poured with boiling water for 5 minutes. During roasting, amazing processes occur with coffee beans that transform the green “pebbles” of coffee berries into that delicious product with a special aroma that we love so much.

As soon as the grains begin to darken, the Maillard reaction begins in them. The internal pressure in the beans increases enough to break their super-strong cell walls, creating a cracking sound. At this stage, melanoids, substances that change the color of the beans, begin to appear. They also help change the taste of coffee.

After the first crack, the reaction changes from endothermic (the beans absorb heat from the drum) to exothermic (the beans release heat). At this stage, the grains increase porosity, and the oils in them migrate to the cell walls.

A process called Strecker degradation then occurs: amino acids react with molecules and form new compounds such as aldehydes and ketones. It is this reaction that is necessary to create the aroma. But chlorogenic acid begins to break down, breaking down into caffeic and quinic acids, which give the grains astringency and bitterness.

The taste and chemical composition of the finished beans can vary quite a lot depending on the degree of roasting: the stronger it is, the lower the acidity and caffeine level. Beans that have undergone less heat treatment will contain more chlorogenic acid (the same that is considered the most beneficial part of green grains), but at the same time you no longer risk catching an unknown infection that raw beans can hide.

Thus, for those who want to get the maximum benefit from coffee, we recommend preparing your favorite drink from the lightest roasted beans. This could be the perfect compromise between your inner coffee drinker and your inner healthy eater.
