I love coffee. I drank and drink it in a variety of forms - dark, and with milk, with foamed and regular milk, I love coffee with cinnamon and other spices. Well, maybe I don’t like unsweetened coffee, I always add sugar, but everything else depends on my mood and current needs. And now I also tried citrus raf. And I fell in love with this new drink so much that I wanted to tell about it and share the recipe for citrus raffa on how to prepare it at home.

I tried citrus raf in “Dudnik”, there is such a chain of coffee shops, probably many people know about them. In general, I like the coffee there, but here I decided to try something new, the choice fell on citrus raf, and since then it has been such a pleasure to drink such coffee.

A drink with orange is not only tasty, but also healthy. It perfectly invigorates and tones. However, in order to achieve a positive effect from its use, you need to select only high-quality ingredients for cooking.

The very idea of ​​drinking coffee with cream was born a long time ago, and its authorship was lost in the darkness of time. But raf coffee was first prepared in the 90s in one of the capital’s coffee establishments.

  • Participants in the events say that it came out in a small Coffee Bean store not far from Kuznetsky Most. There they sold grains, freshly ground coffee and prepared a drink. In the middle of the 90s of the last century, one of the regular guests named Raphael asked to make him “delicious coffee.” But he didn't like the traditional espresso recipe. The barista mixed espresso with cream, added vanilla sugar and steamed the resulting mixture directly in the cup. Rafael liked the purchased cocktail, and he began to actively order it.
  • Regulars of the establishment quickly appreciated the recipe and began asking to make coffee “like Raf’s.” The name of the recipe stuck, and that’s how the famous Raf coffee appeared.

You can also find an alternative version on the Internet. In it, the first sip of raf coffee is attributed to the Emperor of China of the Lian era himself. They say that the Lord mixed coffee and full-fat milk, and fell asleep before tasting the drink. Flower petals fell into the cup, the awakened ruler drank his own coffee and felt a surge of vigor. Everything could be, naturally, but only in the 6th century, when the nuances of the Lian Dynasty, coffee had not yet become widespread, so it is unlikely that the ruler indulged in a cup of raffa.

Cooking tricks

Second experience. Campfire flavored coffee

Okay, I had one more orange left. So the next day I repeated the experiment. This time I didn’t let the bubbles fool me - their appearance, it turns out, does not mean at all that the coffee is boiling (as in Turkish coffee). But here another difficulty arose: the longer I kept the orange on the stove (almost not paying attention to its attempts to arrange festive illumination), the more it obviously released its own juice. Or perhaps shrinking. One way or another, the level of liquid in my homemade vessel at some point exceeded the permissible limit, and the coffee began to gradually pour out onto the fire... Looking at the stained stove, I consoled myself with the fact that an experiment is an experiment, and it’s worth putting up with difficulties.

When the contents of the orange finally got really hot (I tested this by lightly dipping a spoon into the liquid), I poured it into a cup (it ended up being quite a bit) and did tasting number two.

To be honest, the taste was so-so. The distinct notes of smoke and fire seemed unnecessary to me, the temperature was still not high enough, and the extraction clearly did not occur as expected. You can drink it, but the result is clearly not worth it.

First we prepare the coffee. I have a drip coffee maker, so I made coffee in it.

Whisk the warm milk, I do this with a small electronic milk whisk.

We put sugar in the coffee, and I also added a little cool milk so that the coffee is not hot, but warm. Then add orange syrup.

Finally, add steamed milk to the coffee.

The proportions are approximately the following: two parts coffee, one part milk. Although you can have more milk – it’s also tasty and depends only on personal preferences.

And one more important detail - you need to add a little orange syrup, about a tablespoon per glass, otherwise the milk in the coffee will curdle again. Well, it’s not so tasty when there is a lot of syrup - then it overwhelms all the other tastes in the drink, coffee and milk, and it’s no longer the same.
