What is raf coffee
This coffee drink has gained particular popularity among true coffee lovers. It is based on espresso, and the additional ingredients are cream instead of milk and two types of sugar (regular and vanilla). The main advantage of raf is its soft and delicate taste, which is a bit like a creme brulee dessert. You can draw any design on the surface of the foam if you want to make the drink more original and aesthetically pleasing. Rough coffee is served in a special cappuccino glass or a beautiful wine glass. You can also diversify the taste of the drink by adding spices, seasonings, alcoholic beverages or syrups.
Difference from cappuccino
The main difference between raff coffee and cappuccino is the replacement of milk with thick cream. Due to this component, the taste of the drink becomes much softer and lighter. In addition, the basic recipe of these two drinks is very different. For example, if you need to make a cappuccino, whisk the milk separately and then pour it into the base. If you are preparing raf, then you need to froth the cream with all the other ingredients at the same time - the result is an airy taste that all coffee lovers love.

Making raf coffee
Rough coffee is a coffee drink that, in the classic recipe, includes espresso, milk, cream and vanilla sugar. All ingredients are placed in a pitcher, after which the contents are whipped with a steam vent and poured into a glass. But there are other recipes, and today we will prepare raf coffee not with sugar, but with syrup.
Algorithm for preparing raf coffee:
— First you need to brew espresso in the pitcher.
- Then pour cream and milk up to 0.5 cm from the pitcher spout, in a ratio of 1 to 1.
- Then add 10 ml. syrup
- And then whisk all the contents and pour into a glass.
Raf coffee is ready.
Classic recipe in a coffee machine
In order to get the classic taste of the drink, first of all, you need to take care of a powerful and high-quality coffee machine. It should not only brew strong and high-quality espresso, but also whisk all the ingredients. To create good raf coffee you will need:
- 150 g of ready-made espresso;
- 100 g of cream (it is better to choose one with a low fat content of up to 10% - if this is not available, then dilute it with milk);
- 1 teaspoon vanilla and regular sugar.
Add all the ingredients for making espresso to the coffee machine and set the base to prepare. While the machine is running, warm up the container into which you will pour the finished drink (you can choose a regular cup or a special glass). Sugar and cream are poured into the pitcher. In some cases, experts suggest adding vanilla in its pure form, but it is better if there is very little of it, otherwise there will be too much bitterness in the coffee. When the espresso is ready, add it to the pinscher with the other ingredients. Next, beat the entire resulting mass using a steam vent. This concludes the main part of coffee preparation. Decorate your coffee with a topping or design, and you can serve it to the table.
How to cook at home
To easily and quickly make coffee at home, you need to use an expensive and high-quality coffee machine, as well as a cappuccino maker. However, not everyone will have such equipment at home - in this case, you can use a classic cezve, which will allow you to get a similar taste and aroma. The following ingredients are used:
1 teaspoon ground coffee;- 50 g of water (preferably filtered or bottled);
- 100 g cream with less than 10% fat content;
- 1 teaspoon regular and vanilla sugar.
If you want to get a richer aroma and taste of coffee, it is better to grind the roasted beans yourself before cooking. You will feel the difference in taste. A pinch of salt, which is added to the very bottom of the cezve, will also help you improve the quality of the drink. Coffee is poured into a cezve and filled with water - the container is placed on the stove over low heat. In order for the grains to fully reveal their taste and aroma, the cezve is heated gradually. Under no circumstances should the coffee boil. When the foam begins to rise and reaches the edge of the cezve, the coffee is removed from the heat and filtered. If you follow this procedure correctly, the base will be quite strong - if you simply increase the amount of coffee, you will only get bitterness in the drink. The cream needs to be heated in the microwave at this time - usually in standard microwaves you will need no more than 1.5-2 minutes. Next, mix all the resulting ingredients: add coffee, cream and sugar into one vessel, and then beat them with a blender or a special whisk. Warm the serving dish and then pour the resulting drink into it. Additionally, you can decorate it with a pattern or topping.
Composition and calorie content
The cocktail includes a serving of espresso per 100 grams of cream, as well as sugar. Moreover, not only regular, but also vanilla is added. The calorie content of a 150 ml drink is 150 kcal. The high energy value is due to the addition of cream and sugar. If additional additives are added to the composition, there will be even more calories.
Raf coffee is a complete dessert that cannot be classified as dietary
It is not served along with halva and other sweets. The drink itself is quite sweet and nutritious.
Recipes with various flavors
Classic raf coffee is very delicate and light in taste, but for true connoisseurs of coffee drinks, there are recipes that can diversify the taste of coffee. You can experiment with the drink, add new spices and syrups, as well as non-traditional ingredients (orange juice, lavender, etc.). In this article we have collected several variations of such unusual recipes. Among them, everyone will find something to their liking.
Citrus
If you are watching your figure or just want to eat only healthy foods, then citrus raf will be an excellent option for you. Orange juice helps speed up the metabolism in the body and also rids the body of accumulated toxins. For preparation, the same ingredients are used that are in the classic drink, however, you will need to replace vanilla sugar with 20 ml of orange juice. It is necessary to add fresh juice at the stage of mixing all the components (clean it of pulp first), and all other steps are carried out as for the classic recipe.
Honey
This is another variety of raf for those who want to adhere to a healthy lifestyle.
In this case, instead of sugar, honey is added to the coffee drink, which increases the human body’s immunity. In addition, the drink becomes even softer and more tender. To prepare this option you will need: - 50 g of ready-made espresso; - 100 g low-fat cream; - 1 teaspoon of honey.
Add ready-made espresso, heated cream and honey to the cup, and then whisk the whole mixture. Serve in a cappuccino cup, which can be decorated with cinnamon. During the cold season, this is an excellent warming drink.
Walnut
In coffee shops, this type of raf can be seen under the names peanut raf or Snickers. It is much less common to find, but if you like to experiment, try making it at home - the results will truly surprise you. Here the recipe is slightly different from the classic preparation of raffa: you additionally need to add peanut butter, which in its fat content will replace cream. Ingredients:
- Espresso;
- 100 g milk;
- 1 tablespoon peanut butter;
- Syrup or cane sugar to taste.
When choosing peanut butter, it is better if it is produced in America - it contains the highest concentration of nuts, which means it will give the coffee the expected aroma and shade. First, the paste must be diluted in a small amount of clean water - the resulting mixture should be similar to sour cream. Then add the syrup here, mix everything and pour into the pitcher. Add warmed milk to this mixture as well. At the same time, prepare fresh espresso and add to the already prepared mixture. Beat all ingredients with a blender or whisk. Next, choose decorations to your taste and serve.
Lavender
If you are looking for a drink that will help you relieve stress and get rid of negative emotions, then an excellent option would be to add lavender to the raf, which is an alternative to vanilla in taste. The taste of these additives is almost the same, so they can be combined in a coffee drink - it all depends on the result you would like to get. Lavender is also commonly used as a substitute for regular sugar. Take as main ingredients:
- 1 teaspoon of coffee for making espresso;
- 100 g water;
- 100 g low-fat cream;
- 1 teaspoon regular sugar;
- Half a teaspoon of dried lavender (available at the pharmacy).
Brew espresso in a convenient way. Mix the lavender with sugar, and then grind this mixture with a coffee grinder until smooth. Add the resulting mixture to espresso, then add hot cream and froth the resulting mixture. After this, you can serve the finished drink to the table, and for greater effect, you can additionally decorate the coffee with an orange slice or lavender flowers.
Raf cheese coffee
If you are a big cheese lover, then you will definitely like this option. Cheese raff has a subtle piquant flavor and an unusual combination of modern cooking methods. In order to prepare raf, you will need:
- 50 g cream cheese (soft variety);
- 10 g low fat cream;
- 2 teaspoons coffee;
- 2 glasses of clean water;
- A pinch of salt;
- Spices to taste (nutmeg, ginger, cinnamon, black pepper are suitable);
- 1 teaspoon sugar.
Coffee can be prepared with or without spices. Add cheese to the cream and beat the mixture with a whisk or blender to obtain a homogeneous mass. Then pour the mixture into the pitcher along with espresso and sugar and whisk the resulting drink. As a result, you will get a lush and tasty version of raffa with a beautiful foam. Almost any type of cheese is suitable for this recipe (you can take cottage cheese, mascarpone, Philadelphia or processed).
Banana
The banana version of the dessert has become widespread in Russia. Most coffee lovers prefer it precisely because of its soft and light taste, as well as its unusual aroma. This drink will appeal to both men and women: in fact, it plays the role of a separate dessert that will bring joyful and positive emotions to your day. What will you need to prepare it?
- Ready espresso (you can use a Turk or strain coffee);
- 100 g cream 10%;
- Half a banana;
- 1 tsp sugar.
First you need to grind the banana using a blender or manually with a fork. Cream, freshly brewed espresso and sugar are added to this mass. The resulting drink must also be blended with a blender until smooth. Coffee is best served in a tall glass, and whipped cream on top is a great addition.
Raf with halva
The main idea of this drink is to replace sugar with halva. If you add a solid dessert, then 25 grams will be enough for you; you will need to add 20 ml with syrup. Also, for the drink, prepare 150 ml of cream and a fresh shot of espresso. You can also add 10 ml of nut syrup for taste.
Coconut rough
If you practice vegetarianism, then this drink option is right for you, since it is based on coconut milk and not cream. This product is sold in most stores, or you can make it at home using coconut flakes. The recipe is similar to classic raf, but instead of cream, coconut milk is added. You can additionally decorate the drink with coconut chips or shavings on top.
Mint raf
To cool yourself down on a hot summer day, try making mint raff. You will need:
- 100 ml espresso (double shot);
- 100 ml low-fat cream;
- 2-3 tsp. Sahara;
- A sprig of mint.
First, grind the mint in a blender until smooth. Then add cream, coffee and sugar to this mixture and beat the resulting mixture for one minute. This cocktail is best served in a tall glass and topped with a mint sprig. You can also complement the dessert with several blueberries or blueberries - it is better to chop them together with mint for new shades of flavor.
Chocolate raf
This is a classic drink that will please any sweet tooth. Chocolate and cream are a great combination for coffee. For preparation it is used:
- A shot of fresh espresso;
- 50 g milk or dark chocolate;
- 100 ml low-fat cream;
- 1 spoon of vanilla or traditional sugar;
- A little cinnamon.
Let the espresso brew, and at the same time melt the chocolate in a water bath or in the microwave, and also heat the cream. All components are mixed and whipped using a mixer. Then pour the drink into a large glass or cup - you can add a little cinnamon on top.
Raf gingerbread
For the winter period or just a cold evening, raf gingerbread is perfect. Vanilla syrup is used here instead of sugar. It is also recommended to add Gingerbread syrup (20 ml will be enough), 150 ml of low-fat cream and a shot of espresso as additional ingredients. Use whipped cream and candied fruits as decoration.
What is the difference between a cappuccino and a latte?
We have already become familiar with the small differences in the development of latte and cappuccino production. But they explain exactly why two drinks with completely similar composition have different tastes. Moreover, the presentation is also different.
As for the taste properties, the latte comes out more tender, the milky taste predominates in it. Cappuccino, on the other hand, has a coffee flavor. You can also smell the milk in it, but not in the same way. Cappuccino is poured into porcelain cups that expand at the top, the average volume of which is 170 ml. Lattes are served in Irish glasses with a stem, with a capacity of 240 to 360 ml.
Serving raf coffee
As you have already seen in most recipes, the raf is whipped using a pitcher during cooking, but the finished drink is served in a tall coffee glass or cup (in the latter option, you can use a cappuccino mug 180-220 ml).
We told you how to make raf coffee in a coffee shop and at home. Use recipes and create your own! The main thing is to use high-quality coffee and follow the technology.

History of the drink
Perhaps the only drink from the coffee menu that originates in Russia. The fact is that in 1996 in Moscow, near the Kuznetsky Most metro station, a coffee shop-shop called Coffee Bean opened, where you could not only buy some magical coffee beans, but also try them in a ready-made drink, learning the history and characteristics.
It’s clear that the coffee shop almost immediately became popular, despite its tiny size.
And then one day a certain gentleman named Raphael (in some sources - Raphael) appeared there and ordered... tea. Like, coffee is completely not to his taste, it is impossible to make it so that Raphael/Raphael could like it.
Needless to say, the baristas took this as a challenge? They tried a lot of options for proportions, combinations and preparation methods, and still managed to make Raphael fall in love with coffee.
How? Using 10% fat cream, vanilla sugar and espresso, whisking all ingredients in one bowl until smooth and melts on your lips. Looking at the happy Rafa-Rafael, other people also wanted to try this wonderful drink, and so they christened it in honor of the newly minted coffee lover.
Nowadays the number of variations of raffa tends to infinity - it is prepared with cream of different fat contents or with very fat milk, lavender, orange, chocolate, spices, all kinds of syrups, and nut pralines are added.
What remains unchanged in raffe is its amazingly delicate structure and pleasure from every sip.
